Tastes Like Summer

Hello all and happy Friday!

When I was growing up, my mother would make this yummy, super quick, 
easy, lemon pie pretty frequently, especially during the summer months.

Just the other day I was thinking about this pie and decided it was high time 
for me to make it too. Today I want to share the recipe with you so you can 
bring the taste of summer right into your own kitchen.

The ingredients are so simple.

Here's the recipe:

1 graham cracker pie crust

1 small can of lemonade, thawed

1 can of Eagle brand milk

1 small carton of Cool Whip

If you look closely at my picture above, you will see I used a large can of lemonade
and a large cool whip. This just happened to be what I had on hand, and also I like to 
have extra "pie filling" to pour into bowls to enjoy with no pie crust, sort of like
lemon pudding. 

The recipe is pretty forgiving, so it's okay if your sizes of ingredients vary just a bit.

How to make the pie filling...

1.  Pour lemonade and Eagle Brand milk into a bowl and mix.

2.  Fold in Cool Whip and blend.

3.  Pour into graham cracker crust.

4.  Refrigerate or freeze until serving time.

Because I used a large lemonade, my pie did not get firm after storing in the 
refrigerator. I switched it over to the freezer and it is perfect.

The ingredients won't set into a hard frozen pie. Instead, the pie filling will have 
a consistency very much like soft serve ice cream. 

I think it is simply perfect this way! To me, this pie tastes like summer!
