Mid-Week Meal Idea






When your brain is tired and you need something new to blog about, 
a yummy mid-week meal idea is just exactly what is needed.


This recipe is one that my mom made when I was growing up. I loved it and

haven't had it in a LONG time. I'm planning to reintroduce it into our meal rotation
very soon.





Cheeseburger Pie


Ingredients:
  • 1 unbaked 9 inch pie shell
  • 1/2 pound lean ground beef  
  • 1/2 cup reduced fat (or olive oil) mayonaise
  • 1/2 cup milk
  • 2 eggs
  • 1 Tablespoon corn starch
  • 1 1/2 cups chopped cheddar or swiss cheese
  • 1/3 cup sliced green onion
  • dash black pepper

Directions:

Brown meat in skillet. Drain fat. Blend next four ingredients until smooth. Stir in meat,
cheese, onion, and pepper. Turn into unbaked pie shell .

Bake 350 degrees for 35 - 40 minutes, or until golden brown on top.
